Washed Geisha
Grown at 1870 masl in Buesaco, Nariño, this Geisha from Finca La Golondrina undergoes a refined washed process with double-stage anaerobic cherry fermentation. The cherries ferment for 48 hours with orange leaves, sugars, and beer yeast before being depulped, washed, and reintroduced to the tank at ~50% moisture to deepen flavour and aroma. After a final cold rinse, the coffee dries to 11% moisture and rests 15 days on raised beds. This careful process results in a cup with vibrant acidity, layered fruit complexity, and a clean, elegant finish.
